lamingtons.

Today is Australia day. The day to celebrate being Australian. The best holiday of the year.

Since I'm not at home to celebrate, I thought I would make my all time favourite Australian treat, (I didn't even know it was Australian until I moved...I thought it was a universal treat) the Lamington. We used to have these amazing little cakes nearly every afternoon when we were growing up. They are delicious.

I followed this easy recipe and was so pleased with the result. I felt like I was back at home.

  13. Hey chica, glad you found a way to celebrate. It was rainy in Sydney for most of the day...which was a bummer. I had my heart set on a beach day.
