halloumi and chorizo ciabatta


Whenever George and I are in London, we always try to visit Blackheath - a little village in south east London where I lived all throughout 2009 (see here). When we are there, we always end up going to the little deli which has the best lunches ever. However, I'm not the best judge seeing as whenever I am there I always order this halloumi and chorizo ciabatta (eating it here).

Since I haven't been back to Blackheath for what feels like forever, I haven't had my usual monthly (at least) fix of this delicious lunch. So next best thing? Make it at home. So perfect for a mid-week lunch while sitting in the sun. I'm going to find it impossible not to make it every day for the rest of the week.

For the recipe, I just went off memory so I am pretty sure I have forgotten an ingredient or two (when I have lunch there next I'll update it) but this is what I used:

2 ciabatta's
10 thin slices chorizo
Block of halloumi cheese; quickly pan fried or grilled
Baby Spinach
Green pesto

  13. I found about halloumi cheese through a friend of mine a couple of years ago - and fell in love with it on that very first second I tasted it.
    What a great idea to combine it with chorizo!

    Nothing on earth tastes better. Except sushi, and maybe popcorn. But oh my gracious, that ciabatta looks so yummy!

  36. This looks absolutely delicious!! I LOVE Halloumi cheese. A Greek cafe in my neighborhood makes a delicious variation of this sandwich, with slices of a really flavorful Cypriot sausage.
